COOKING INSTRUCTIONS

PREPARING THE INGREDIENTS

  • Mince 7-8 cloves of garlic

  • Thinly slice 30g of scallions

  • Prepare the sauce by mixing 3 tbsp of water, 3 tbsp of light soy sauce, 2 tbsp of dark soy sauce and 3 tbsp of honey in a mixing bowl, and set aside

PREPARING THE CHICKEN

Use paper towels to pat dry the chicken (400g) removing any excess moisture. I’m using thigh fillets with the skin on, which helps absorb the flavorful sauce, but feel free to use any cut you like. Season the chicken with ½ teaspoon of salt and ½ teaspoon of pepper and turn the pieces to ensure both sides are evenly seasoned.

Add 4 tablespoons of cooking oil to a pan and heat it up. I’m using sunflower oil, but any neutral oil works—just steer clear of olive or avocado oil, as their strong flavors clash with Asian-style cooking. Once the oil is hot, place the chicken pieces in the pan and cook for 5 to 6 minutes, or until they’re about 80% done. Remove the chicken and set aside.

BRINING IT ALL TOGETHER

In the same pan, add the minced garlic and sauté for about a minute, or until it turns golden and fragrant. Pour in the prepared sauce and bring it to a gentle simmer. Return the chicken pieces to the pan, turning them to ensure they’re fully cooked and evenly coated in the sauce. Once the chicken is done, sprinkle over the chopped scallions and the dish is ready to serve.
