Tomato Egg Drop Soup

This Tomato Egg Drop Soup is a classic Chinese restaurant favorite that’s quick, easy, and incredibly comforting. The warmth from white pepper adds a gentle heat that’s soothing and comforting, especially on cold winter days.

INGREDIENTS

Tomatoes - 200g

Eggs - 2 medium

Chicken Stock - 1.5 liter

Garlic - 1 clove

Scallions - 30g (2-3 bunches)

Soy Sauce - 2 tbsp

Sesame Oil - 1 tbsp

White Pepper - 1/2 tsp

Sugar - 1 tsp


SLURRY

Corn Starch - 1/2 cup

Water - 1/4 cup

COOKING INSTRUCTIONS


Preparing the ingredients

  • Dice 2 medium size tomatoes

  • Thinly slice some scallions (30g) and separate whites and greens

  • Beat 2 medium size eggs

  • Prepare slurry by mixing 1/2 cup of corn starch and 1/4 cup of water. Mix well and set aside.

Putting it all together

  • Heat 2–3 tablespoons of cooking oil in a saucepan over low heat.

  • Add grated garlic and the white part of the scallions. Sauté for about 30 seconds until fragrant.

  • Add the diced tomatoes and cook for around 2 minutes, or until they begin to soften.

  • Pour in 1.5 litres of chicken stock and bring it to a gentle simmer.

  • Season the soup with 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, ½ teaspoon of white pepper, and ½ teaspoon of sugar.

  • Gradually stir in the cornstarch slurry to thicken the soup.

  • Slowly pour the beaten eggs into the pot in a circular motion using a ladle. This helps create thin, silky ribbons of egg throughout the soup.

  • Taste and adjust the seasoning if needed.

  • Once the soup starts to thicken, add green part of scallions and take it off the stove

  • Once the soup thickens, add the green part of the scallions, turn off the heat, and it’s ready to serve.
