COOKING INSTRUCTIONS

Preparing the ingredients

  • Trim the ends of the green beans (350g) and rinse them under running water. Pat them dry thoroughly with a kitchen towel.

  • Mince 15 cloves of garlic

Putting it all together

  • Heat 1.5 cups of cooking oil in a wok over high heat. Once hot, flash-fry the green beans in 2 to 3 batches for about 30–45 seconds, or until they start to blister. Avoid overcrowding the wok so the beans cook evenly. I'm using sunflower oil, which is leftover from my previous recipe.

  • Once the green beans are done, remove them from the wok and place them on paper towels to drain any excess oil.

  • Carefully remove most of the oil from the wok, leaving behind about 1–2 tablespoons.

  • Add the minced garlic and sauté over low to medium heat for about 2 minutes, or until it turns golden and fragrant. Garlic is the key ingredient in this recipe, so it’s important to cook it until it turns golden. If it’s undercooked, the flavor won’t fully develop, and the dish won’t have that rich, aromatic taste.

  • Now add the green beans back into the wok and season with ½ teaspoon of salt and ½ teaspoon of seasoning powder. You can use chicken bouillon or go with Vegeta seasoning for a vegan-friendly option—I’m using Vegeta in this recipe.

  • Give it a quick taste and adjust the seasoning if needed. Stir everything together for a few seconds until well combined, and your dish is ready to serve!
