Silken Tofu in garlic mushroom sauce

INGREDIENTS

Silken Tofu - 300g

Brown Beech Mushrooms - 100g

Cooking Oil - 2 tbsp

Garlic - 5 cloves

Sugar - 1 tsp

Scallions - 8g (whites) + 20g (greens)

Water - 200ml

Light Soy Sauce - 2 tbsp

Vegetarian Oyster Sauce - 1 tbsp

White Pepper - 1/2 tsp

Sesame Oil - 1 tsp

Corn Starch - 1 tsp

Preparing the ingredients

  • Mince 5 cloves of garlic

  • Thinly slice about 25–30g of scallions, separating the white and green parts.

  • Trim off the roots of the brown beech mushrooms and rinse them thoroughly under running water.

Preparing the Tofu

  • Carefully remove the tofu from its packet or container and drain any excess liquid.

  • Place the tofu on a heatproof plate, then set it inside a steamer. I'm using a large wok with a steamer rack for this.

  • Then cover and steam the tofu for a few minutes while preparing the sauce

Preparing the sauce

  • In a small bowl, combine 200ml of water with 2 tablespoons of light soy sauce, 1 tablespoon of vegetarian oyster sauce, 1/2 teaspoon of white pepper, 1 teaspoon of sesame oil, and 1 teaspoon of cornstarch.

  • Stir well until the cornstarch is fully dissolved, then set the sauce aside.

Cooking Instructions

  • Heat 2 tablespoons of cooking oil in a small pan and sauté the minced garlic for about 1 minute until fragrant.

  • Add the white parts of scallions and continue to sauté for another minute.

  • Add the beech mushrooms and season with 1 teaspoon of sugar

  • Pour in the prepared sauce and let it simmer gently, stirring occasionally, until it thickens.

  • Remove the cover of the steamer, then carefully take out the plate of tofu and pour off any excess liquid.

  • Pour the sauce over the steamed tofu and replace the cover. Then continue to steam for one more minute.

  • Top with the green parts of scallions and the dish is ready to serve!
