INGREDIENTS
Barramundi (or any other white fish) fillet - 300g
Salt -1 tsp
Pepper - 1 tsp
Garlic powder - 1/2 tsp
Plain flour - 1 cup
Cooking oil - 3 tbsp
Butter - 2 tbsp
Garlic - 5 cloves
Chicken Stock (or water) - 1 cup
Parsley - 10g
Lemon slices or lemon juice - to taste

INSTRUCTIONS
Prepare the ingredients:
Mince 5 cloves of garlic
Finely chop some parsley (10g)
Cut 1 lemon into thin slices (or you can use lemon juice)
Prepare the fish:
Pat dry 300g of Barramundi fish fillets with paper towels. You can use any other type of white fish. Then season with salt (1/2 tsp), pepper (1/2 tsp) and garlic powder (1/2 tsp).
Coat the fish pieces in 1 cup of plain flour and tap off the excess flour.
Heat 3 tbsp of cooking oil in a shallow pan and add 1 tbsp of butter. Then sauté the fish pieces for about 2-3 minutes on each side or until they are about 80% cooked.
Then take them out of the pan and set aside.
Cooking process:
Remove most of the oil from the pan, leaving about 2-3 tablespoon of leftover oil. Alternatively, you can empty the pan and add 2-3 tablespoon of fresh cooking oil. Then add 1 tbsp of butter.
Add minced garlic (5 cloves) and saute for 2 minutes or until golden.
Add 1 tablespoon of plain flour and stir for one minute. This helps thicken the sauce.
Season with 1/2 tsp of salt and 1/2 tsp of black pepper.
Add 1 cup of chicken stock or plain water, then add chopped parsley (10g)
Slowly bring it to a simmer. After a few mins, it starts to thicken because of the flour.
Add either lemon juice or lemon slices. At this point, have a taste and adjust the taste to your liking.
Add fish back into the pan, cover and simmer for 2-3 minutes.
Top with some additional fresh parsley, and we’re done!
