Espresso Creme Caramel

Easy No-bake espresso pudding

This rich and creamy Espresso Caramel Pudding is made with freshly ground espresso coffee for a bold, aromatic flavor. It’s an easy, no-bake dessert that requires no eggs, no oven, and no special tools—perfect for beginners or anyone looking for a fuss-free treat.

With a smooth, melt-in-your-mouth texture and a deep caramel layer, this chilled pudding is the ultimate dessert for coffee lovers. Just a handful of simple ingredients and a stovetop is all you need to make this indulgent yet effortless recipe.

INGREDIENTS:

ESPRESSO CARAMEL

Sugar - 50g

Espresso Coffee - 70ml

CREME CARAMEL MIXTURE

Gelatin - 2 tbsp

Water - 2 tbsp

Full Cream Milk - 150ml

Thickened Cream - 100ml

Espresso Coffee - 100ml

Sugar - 40 g

Salt - a pinch (or 10g)

Freshly made espresso coffee

Heating sugar and espresso together

Fragrant espresso caramel

Pouring the caramel into the moulds

Making creme caramel mixture

Pouring into moulds

Cover and refrigerate for minimum 3 hours

Removing from mould

Enjoy!

Instructions:

Make the espresso caramel:
In a shallow pan, combine 50g of sugar with 70ml of freshly brewed espresso. (You can also use coffee made from instant coffee powder as long as you make it quite strong). Heat over medium heat, stirring occasionally, until the mixture thickens into a syrupy consistency. This is your espresso caramel. Pour it into molds and let it cool at room temperature until it firms up.

Bloom the gelatin:
In a small bowl, mix 2 tablespoons of gelatin powder with 2 tablespoons of water. Let it sit for a few minutes to bloom.

Prepare the milk mixture:
In a jar or mixing bowl, combine 150ml of full cream milk, 100ml of cream, 100ml of espresso, 40g of sugar, and a pinch of salt. Stir until well mixed.

Microwave the bloomed gelatin for about 20 seconds until fully melted. Pour it into the milk mixture and stir until everything is well combined.

Assemble and chill:
Pour the milk mixture over the cooled caramel in the molds. Let it chill in the fridge for at least 3 hours or until fully set.

Serve:
To serve, run a thin knife along the edges of the mold to loosen, then flip onto a plate. Enjoy the rich, creamy flavor of espresso with every bite!
