INGREDIENTS
Prawns - 250g
Light Soy Sauce - 1 tbsp
Shaoxing Wine - 1 tsp
Sugar - 1 tsp
SAUCE
Water - 1/3 cup
Light Soy Sauce - 2 tbsp
Dark Soy Sauce - 2 tbsp
Shaoxing Wine - 1 tbsp
Sugar - 1 tbsp
Cornstarch - 1 tbsp
OTHER
Udon Noodles - 400g
Scallions - 25g
Onion - 100g
COOKING PROCESS
PREPARING THE INGREDIENTS
Mince 5 cloves of garlic
Cut onions into about 1-2 cm pieces
Soak the udon noodles in boiling water for 10–15 minutes, or until they loosen and soften. Preparation can vary by brand, so refer to the package instructions.
Chop the scallions into 2-inch pieces, separating the white and green parts, as they will be added at different stages of cooking.
Clean and devein 250g of prawns, then marinate them with 1 tbsp of light soy sauce, 1 tsp of Shaoxing wine, and 1 tsp of sugar.
Prepare the sauce by mixing 1/3 cup of water, 2 tbsp of light soy sauce, 2 tbsp of dark soy sauce, 1 tbsp of Shaoxing wine, 1 tbsp of sugar and 1 tbsp of cornstarch. Mix it well and set aside.
BRINING THE DISH TOGETHER
Heat 1 tsp of oil in a wok over high heat and sauté the onions for 1–2 minutes until slightly charred. Avoid overcooking so they stay crisp. Remove and set aside.
Add 2 tbsp of oil to the same wok and sauté the prawns for 4–5 minutes, adjusting the time based on their size. Remove once cooked.
In the same wok, add the minced garlic and the white parts of the scallions. Sauté for 1–2 minutes, then add the udon noodles. Return the onions and prawns to the wok.
Give the sauce a quick stir and pour it in. Stir-fry for 1–2 minutes until the sauce thickens and coats the noodles, turning them glossy.
Top with the green scallions, give everything a quick toss, and it’s done — a delicious, savoury noodle dish ready to serve.
