Chicken Fried Rice
I don't have a lot of ingredients at home today, but I still want to make something delicious. So, instead of going to the shops, I'm making chicken fried rice using what I already have in my kitchen.
This is one of those recipes I love when I want something quick, filling and satisfying without needing a long list of ingredients. I had some chicken thighs, eggs, frozen vegetables and rice, which is pretty much all I needed to make a really tasty fried rice.
The best part? This easy chicken fried rice comes together in under 20 minutes.
Why I love this chicken fried rice
Fried rice is one of those meals that doesn't need to be complicated. You can use whatever vegetables you have in the fridge or freezer, and it's a great way to use up leftover rice.
For this version, I'm using chicken thighs because they stay juicy and tender when fried. I also like using frozen vegetables because they're convenient and there's no chopping or preparation needed.
For the rice, day-old cooked rice is ideal because it is a little drier and fries nicely in the pan. But if you don't have leftover rice, don't worry. I often use microwave rice when I need a quick meal, and it works really well too.
The sauce is also very simple, using just a few pantry staples to give the fried rice a savoury, slightly smoky flavour.

Ingredients for chicken fried rice
INGREDIENTS
Chicken
Chicken thigh fillets - 250g
Frozen vegetables - 150g
Garlic - 6 cloves
Eggs - 3 large
Scallions - 25g
Cooked rice - 500g
Cooking oil - 2 tbsp
Chicken Marinade
Light soy sauce - 0.5 tbsp
Dark soy sauce - 0.5 tbsp
Chicken powder - 0.5 tbsp
Stir -fry Sauce
Light soy sauce - 3 tbsp
Dark soy sauce - 2 tbsp
Sesame oil - 1 tbsp
Chicken powder - 1 tbsp
White pepper - 1 tbsp
How to make chicken fried rice
Prepare the Chicken
Cut the chicken thighs into small, bite-sized pieces.
Add soy sauce, dark soy sauce and chicken powder, then mix well. Set the chicken aside while you prepare the rest of the ingredients.
Make the sauce
Mix all the sauce ingredients together in a small bowl and set aside.
Light soy sauce - 3 tbsp
Dark soy sauce - 2 tbsp
Sesame oil - 1 tbsp
Chicken powder - 1 tbsp
White pepper - 1 tbsp
I like making the sauce before I start cooking because once everything goes into the pan, the cooking happens quite quickly..
Prepare everything else
Beat three eggs and set them aside.
If you’re using leftover rice, you’re ready to go! Just use your hands to break up any lumps so the rice doesn’t clump together while cooking.
If you don't have cooked rice in the fridge, microwave rice is a really convenient option. Heat it up in the microwave according to the package instructions, then let it cool before stir-frying.
I'm also using frozen carrots, corn and peas. You can use fresh vegetables if that's what you have, but frozen vegetables make this meal even easier.
Cook the chicken
Heat two tablespoons of cooking oil in a large frying pan or wok over medium-high heat.
Add the chicken and stir-fry for about five minutes, or until the chicken is cooked through.
Remove the chicken from the pan and set it aside.
Cook the eggs and vegetables
Using the same pan, add the garlic and the white part of the scallions.
Stir-fry for a few seconds until fragrant, then add the beaten eggs.
Scramble the eggs until cooked, about one to two minutes.
Add the frozen vegetables and stir-fry for another minute.
Add the rice, chicken and sauce
Add the cooked rice, chicken and prepared sauce to the pan.
Turn the heat up to high and stir-fry everything together for about three to five minutes.
Keep tossing everything until the rice is evenly coated in the sauce and becomes slightly dry.
Finish with a little white pepper and the green part of the scallions.
Give everything one final toss and you're done!
